Comfort Food Congee

  • 1 cup of short grain rice (like Kokuho Rose Rice)

  • 8 cups of water

  • 1 teaspoon of salt

  • Green onion

  • Boiled egg (optional)

  • Chicken (optional)


  1. Add 1 cup of rice and 8 cups of water to a pressure cooker. I am a savage and lazy and sometimes don’t wash the rice. To each their own.

  2. Add salt.

  3. Chop the chicken into bite-sized pieces and toss into the pressure cooker as well.

  4. Set the pressure cooker for 30 minutes.

  5. Once done, chop the green onion and sprinkle on top of the congee.

  6. Cut a boiled egg in half and place on top of a bowl of congee. Drizzle some soy sauce on the egg yolks.
