Surprise Muffins

Makes 10 to 12 muffins


  • 1 3/4 cups(219g) all-purpose flour (spooned and leveled)

  • 1/4 (50g) cup sugar

  • 2 teaspoons baking powder

  • 1/2 teaspoon salt

  • 1 egg, at room temp.

  • 3/4 cup milk (180ml), at room temp.

  • 1/3 (80ml) cup cooking oil

  • 6 tablespoon's of grape or strawberry jelly


  1. Preheat oven to 400℉ (204℃) and grease muffin cups or line with paper bake cups.

  2. In a large mixing bowl stir together the flour, sugar, baking powder, and salt. Make a well in the center.

  3. In a separate small bowl, combine egg, milk, and oil.

  4. Add wet ingredients all at once to flour mixture.

  5. Stir just till moistened; batter should be lumpy.

  6. Fill muffin cups 2/3 full.

  7. Fold a spoonful of grape or strawberry jelly inside most muffins before baking.

  8. Bake for 20 to 25 minutes or till golden.

  9. Remove from pans; serve warm.

  10. Do not reveal which muffins contain which flavor of jelly. Some muffins will, in fact, not contain any jelly surprises at all.
