Makes 10 to 12 muffins
1 3/4 cups(219g) all-purpose flour (spooned and leveled)
1/4 (50g) cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 egg, at room temp.
3/4 cup milk (180ml), at room temp.
1/3 (80ml) cup cooking oil
6 tablespoon's of grape or strawberry jelly
Preheat oven to 400℉ (204℃) and grease muffin cups or line with paper bake cups.
In a large mixing bowl stir together the flour, sugar, baking powder, and salt. Make a well in the center.
In a separate small bowl, combine egg, milk, and oil.
Add wet ingredients all at once to flour mixture.
Stir just till moistened; batter should be lumpy.
Fill muffin cups 2/3 full.
Fold a spoonful of grape or strawberry jelly inside most muffins before baking.
Bake for 20 to 25 minutes or till golden.
Remove from pans; serve warm.
Do not reveal which muffins contain which flavor of jelly. Some muffins will, in fact, not contain any jelly surprises at all.
